Cheap ALDI Soup Recipe! | $.82 Hearty Fall Meal

Dropping temperatures leave me wanting ALL the warm things! Cozy blankets, foamy cappuccinos, and especially hearty meals. This cheap ALDI soup recipe is exactly what the season ordered!

One-pot. Easy. Healthy. Delicious.

Plus, it’s gluten-free and dairy-free!

In the cooler months, hearty soups and stews are one of my all-time favorite ways to save money on groceries.

As if I needed yet another reason to love fall!

You can make a huge pot of soup and it lasts for days. Soups also make great freezer meals for the days you don’t feel like cooking!

Or washing a bunch of dishes.

Don’t get me wrong! I truly love to cook, but sometimes it’s nice to have a break.

Especially when it saves me both time and money!

Cheap ALDI Soup Recipe – Cost Breakdown

Since it actually feels like fall now, I’m sharing one of my favorite fall soup recipes that costs only $.82 per bowl!

I made it up, and I don’t really have a name for it, so we’ll just call it my “Cheap ALDI Soup” since I get most of the ingredients at ALDI!

Here’s the breakdown using ALDI prices:

  • $4 — 1 lb. ground beef
  • $.50 — 4 medium carrots
  • $.50 — 2 yellow onions
  • $.55 — 4-5 medium potatoes
  • $.80 — 1 lb. bag frozen green beans
  • $.95 — 1 lb. bag frozen corn
  • $1.65 — 28 oz. can organic diced tomatoes
  • $1.70 — 32 oz. carton chicken or beef broth
  • $10.65 — TOTAL

Makes 13 servings, which comes to just $.82 per 12-ounce bowl!

If you’re like me and try to buy as much organic food as you can, here’s the breakdown for what I spent at ALDI and Sprouts for this same bowl of soup!

  • $4 — 1 lb. grass-fed ground beef (SPROUTS on sale)
  • $.75 — 4 organic medium carrots (SPROUTS)
  • $.50 — 2 yellow onions (ALDI)
  • $1.50 — 4-5 organic medium potatoes (SPROUTS)
  • $2 — 1 lb. bag organic frozen green beans (ALDI)
  • $1.90 — 1 lb. bag organic frozen corn (ALDI)
  • $1.65 — 28 oz. can organic diced tomatoes (ALDI)
  • $2.20 — 32 oz. carton organic chicken or beef broth (ALDI)
  • $14.50 — TOTAL

As you can see, the total cost does jump up, but it only costs about $.30 more per serving at $1.12 per bowl. Not bad for organic!

Cheap ALDI Soup Recipe

This recipe is very adaptable because that’s the way I cook! If I’m following a recipe, I’ll probably change it. So feel free to do the same—adapt it to how your family likes to eat.

Trust me—you can’t mess up this soup!

Ingredients:

  • 2 yellow onions, sliced or diced
  • 1 lb. ground beef
  • 4 medium carrots, sliced
  • 4-5 medium potatoes, chopped
  • 1 lb. bag frozen green beans
  • 1 lb. bag frozen corn
  • 28 oz. can diced tomatoes
  • 32 oz. carton chicken or beef broth

Instructions:

1. Heat a large stockpot on the stove to medium-high. Add some oil or butter. When it’s hot, add the onions. (You can even add in fresh garlic now if you’d like!) Salt and taste as you go.

2. Once the onions look translucent, add the ground beef and break it up as it cooks.

3. When the ground beef is cooked, add the carrots and cook for 5 minutes. Add the potatoes and cook 5 minutes more. Stir occasionally. Add some more butter or oil and a splash of chicken broth to keep the pan from becoming too dry.

4. Once the potatoes and carrots are beginning to soften, add the frozen corn, green beans, and diced tomatoes. Stir and cook for 5 minutes. Add the chicken broth.

5. Now for the fun part—adding in herbs and spices! I used dried basil, oregano, and black pepper. Be generous and taste as you go! Simmer until the vegetables are tender.

6. Optional: Once the soup is finished cooking, you can also add some fresh chopped basil and rosemary, letting the herbs cook for just a few minutes before serving. (Great if you have an herb garden!)

If desired, top with shredded cheese and serve with corn chips. Tossed baby greens are also a lovely side addition!
